Baked Potatoes Reuben
Makes 4 servings.
4 Idaho baking potatoes
2 cups sauerkraut, drained
2 cups corned beef, finely chopped
Russian salad dressing
1 cup grated Swiss cheese
Bake potatoes until tender. Split lengthwise and squeeze potatoes to open. Cover
each potato with 1/2 cup sauerkraut, 1/2 cup corned beef and salt dressing to
taste. Cover each with 1/4 cup of the grated Swiss cheese. Place in baking dish.
Bake uncovered at 400 degrees F until cheese melts - about 15 minutes.
Serve at once.
